Oh, What A Night!

It was all about good vibes, delicious food and great conversation when we launched our AW 17 Slow Livin’ collection and premiered our short film SLOW at The Fig Tree in Byron Bay last week.
A group of inspiring folk joined us for INK gin and Pure Cane Rum cocktails, tunes by Milo Green, canapés and a delicious sit-down dinner lovingly prepared by the team at the Fig Tree.
Our film SLOW created by cinematographer Stefan Jose and director Lincoln Caplice, centered on the Sawyer family and their free-range lifestyle, touched us all and served as a poignant reminder to enjoy life’s precious little moments.
Hosted by our MC Jess Skarratt, guests Julia Ashwood, Claire Alexander-Johnston and Elisa Sawyer kindly took part in an insightful and very funny panel discussion on the benefits of living a little slower.
After all, those little moments, those little things, they’re not little. A huge thank you to the following people for helping us create the perfect evening:

We feasted on:

Fig, sweet basil and baby mozzarella skewers
Coconut & lime cured snapper, coriander & chilli
Sticky, slow-cooked Vietnamese pork spoons
Spanner crab, corn tostadas w green chilli salsa and sour cream
Spanish Empanadas, mint yoghurt

MAIN (shared platters)
Potato gnocchi w roasted pumpkin, olives, goats curd & sage
Local line caught fish of the day w grilled asparagus, lemon caper butter
Breast of free range chicken, prosciutto, tomatoes, capers, olives and lemon

Mushroom & tarragon risotto w truffled parmesan
Roasted root vegetables & chardonnay mustard aioli
Rocket, slow roasted pumpkin & local goats curd w aged balsamic dressing.

Fig Tree Éton Mess’- meringues e seasonal fruits & vanilla cream
Sticky date pudding w salted caramel.
